Kombucha
What is it?
Kombucha is a fermented tea-based beverage with a sour and slightly sweet flavor.
How is it made?
It is traditionally made from black or green tea, sugar, and a symbiotic colony of bacteria and yeast known as a SCOBY (Symbiotic Culture of Bacteria and Yeast). The symbiotic colony is then left to ferment with the tea for 7 to 15 days.
Benefits
- Contains natural probiotics (lactobacilli and other bacteria/yeasts) that promote the microbiota.
- It preserves antioxidants from tea (green or black), which help against oxidative stress.
- Contains organic acids (lactic, acetic) with antimicrobial and digestive activity.
- Mild energizer due to small amounts of caffeine and possible presence of B vitamins.
