What is it?
These are foods, whether of animal or plant origin, that undergo a sterilization process and are packaged in airtight containers, such as cans or jars, to extend their shelf life and allow them to be consumed for a long time without refrigeration. This heat treatment destroys microorganisms and enzymes, maintaining the quality and nutritional value of the food for extended periods.

How is it made?
It is made by cooking fruit (whole or chopped) with or without sugar until a gel forms, thanks to the action of natural or added pectin. Citric acid can be added to improve the flavor and texture.
